摘    要:对斗鸡、艾维菌肉鸡及其杂交一代鸡8周龄和12周龄胸腿肌肉品质分析的结果表明:遗传因素对肉质性状有较大影响,斗鸡、艾维菌肉鸡及其杂交一代鸡的肌肉水分、蛋白南、脂肪、微量元素等有显著差异、肌纤维直径、PH值和熟肉率也有所不同,斗鸡的肉质性状及感官评定结果最优,其次是杂交一代鸡,艾维茵肉鸡最差,胸腿部位间多数指标存在显著差异,而性别和周龄对肉质性状的影响较小。

Abstract:The properties at 8 weeks of age and 12 weeks of age of chest muscle and leg muscle for Cock Fighting,Avine and their F1 was determined.The results showed that inherent cause influence the meat properties greatly.There was significant difference in meat moisture content,protein,fat and trace elements for Cock Fighting,Avian and their F1,and there was difference in diameter of muscle fiber,cooked meat rate and pH also,The meat properties and sense perception for Cock Fighting was best and F1 was in medium,Most targets of meat between leg and chest had significant differences. but sex and weeks had little influence on meat properties.
