摘    要:【目的】建立大肠埃希氏菌在熟肉制品中的生长预测模型。【方法】分别将大肠埃希氏菌接种到熟猪肉的不同部位(猪肌肉组织和脂肪组织),以及接种到经不同盐质量分数加工过的熟肉中,测定大肠埃希氏菌菌落数,用Origin 8.0统计软件对数据进行模型拟合。【结果】两个温度下大肠埃希氏菌在熟猪瘦肉和脂肪上的生长用Gompertz方程拟合要比线性方程拟合的好,而Logistic方程则能较好的描述不同盐质量分数时大肠埃希氏菌在熟肉上的生长。模型拟合的标准差和相关系数相对较好,表明建立的Gompertz方程、线性方程和Logistic方程的模型均有效。【结论】Gompertz方程和Logistic方程能够很好预测大肠埃希氏菌在不同熟肉制品中的生长。

Abstract:Objective]To establish the growth predicting models of Escherichia coli in processed meat products.Method]Escherichia coli was inoculated into different parts of meat (muscle and fat),or inoculated into the meats which were processed in different salt concentrations,the numbers of colonies of Escherichia coli were measured by sampling at different periods.The growth predicting models were established with the data obtained by using 8.0 Statistical Software.Result]The Gompertz showed better than the Linear in describing the growth of Escherichia coli in meat both lean and fat at two temperatures.The Logistic model was suitable to describe growth of Escherichia coli in the meats which were processed in different salt concentrations.The obtained standard deviation and the correlation coefficient from the equations indicated that the established models by Gompertz,Linear equation and Logistic were effective.Conclusion]Gompertz and Logistic models could be applied for predicting the growth of Escherichia coli in processed meat products.
