抗真菌乳酸菌的筛选及菌种鉴定

摘    要:采用双层培养基法从中国传统发酵食品(发酵乳、泡菜、发酵肉)中筛选到20株对真菌有拮抗作用的乳酸菌菌株。对其中7株具有明显拮抗作用菌株的抑菌谱进行了初步研究,这7株菌对啤酒酵母、汉逊酵母、枯草芽胞杆菌等有明显的抑制作用,对黑曲霉可明显抑制其孢子的成熟。对其中2株菌进行了常规生理生化及16SrRNA分子鉴定,鉴定结果为干酪乳杆菌鼠李糖亚种。

Abstract:Twenty antifungal lactic acid bacteria strains were screened by di-layer medium method from traditional Chinese fermented food(tibet kefir, pickled vegetables, fermented meat). The antifungal and antibacterial spectrum was studied, it was found that seven strains have obvious antagonistic effect on Saccharomyces cerevisiae, Debaryomyces hansenii, Bacillus subtilis, etc. and they can also inhibit the spore maturation of Aspergillus niger. Then the traditional identification and 16S rRNA molecular identification were done for two strains, the result showed that they were Lactobacillus casei ssp. Rhamnosus.
