摘    要:采用2×3二因素随机区组试验设计,探讨了在相同日龄屠宰及相同生长周期屠宰条件下适温自由采食、适温限饲和高温自由采食3种应激模式对AA肉鸡和北京油鸡肉色造成的差异。结果表明:按相同日龄屠宰时,2个品种肉鸡之间胸肌亮度、红度、黄度均差异极显著;3种应激模式之间的亮度、红度、黄度差异均不显著。按相同生长周期屠宰时,2个品种肉鸡之间的亮度、红度差异极显著,黄度差异不显著;3种应激模式下的亮度差异显著,红度、黄度差异不显著。

Abstract:To study the effects of stress models on broilers' meat colors,the differences of meat colors between AA broiler and Beijing You broiler were discussed among three stress models on the condition that slaughtered at the same age and slaughtered during the same growing period separately.The three stress models were fitting temperature and ad libitum,fitting temperature and restriction,high temperature and ad libitum.The experiment involved 6 treatments with 6 repeats,2×3 factorial arrangement,consisting of 2 levels of broiler breeds and 3 levels of stress models.Results show that,when slaughtered at the same age,the differences of the lighteness、redness、yellowness of musculus pectoralis were all very significant between the two broiler breeds and were not significant among the three stress models.When slaughtered during the same period,the differences of the lightenless and the redness were very significant and the differences of the yellowness was not significant between the two broiler breeds,the differences of the lightenless was significant among the three stress models,and the differences of the redness and the yellowness were not significant.
