海北州牦牛主要副产物营养物质测定报告

摘    要:通过采集海北8头牦牛和8头黄牛脏器(心、肝、肺、肾),经过仪器测定,表明海北牦牛肝脏中含蛋白质19.82 g/100g,比普通黄牛高0.99 g/100g;肝脏和心脏中脂肪含量分别为2.02 g/100g和1.88 g/100g,比普通黄牛低0.74 g/100g和1.17 g/100g;灰分二者差异均不显著,但含量均较丰富;海北牦牛肝脏中含糖元4.82 g/100g,比普通黄牛高1.14 g/100g。

Detection report of main byproduct nutrients in yak in Haibei prefecture

Abstract:The organs (heart, liver, lung, kidney ) of 8 yaks and 8 cattle were collected in Haibei prefecture for detecting its nutrients. The results showed that protein content in Haibei yaks was 19.82g/100g in the liver, higher of 0.99g/100g comparing with cattle. The fat contents in liver and heart were 2.02g/100g and 1.88g/100g respectively, lower of 0. 74g/100g and 1. 17g/100g respectively comparing with cattle. There is not significant difference in ash content between them, but the content is rich. The glycogen content in liver is 4.82g/100g in Haibei yak, higher of 1. 14g/100g comparing with cattle.
