摘    要:采用双螺杆挤压膨化机处理甘薯渣,通过高温、碾磨和剪切作用,使甘薯渣中不溶性膳食纤维转化为可溶性膳食纤维,并通过响应面分析,确定最适的挤压膨化工艺参数。试验表明:在物料水分含量18.75%、挤压膨化机桶壁温度159.7℃、转筒转速91 r/min条件下处理甘薯渣,物料中可溶性膳食纤维含量为9.64%,比未处理的提高了6.3个百分点。

Abstract:The soluble dietary fiber(SDF) was made by using the residues of sweet potato as raw material.The insoluble dietary fiber was converted to SDF by treatment with twin-screw extruder.The optimal processing parameters were established as follows: water content of material 18.75%;extrusion temperature 159.7 ℃;speed of screw 91 r/min.Under above-mentioned conditions,the SDF content in the treated material was 9.64%,which was 6.3 percent higher than that in the untreated material.
