薏米、枸杞保健饮品的研制

摘    要:以薏米和枸杞为主要原料制成一种保健饮品。通过正交试验,确定最佳生产配比为:蔗糖5%,柠檬酸0.2%,薏米、枸杞的比例为3∶1。对饮料的可溶性固形物、酸度、还原糖、金属元素、氨基酸含量等指标进行测定。结果为:可溶性固形物5.76%;pH值5.42;还原糖含量17.9mg·L-1。Zn、Mg、Na、Fe、Mn、Ca、K等7种金属元素的含量分别为0.0045,4.7855,35.1020,0.0169,0.0060,4.7429,22.3690g·L-1。Cd、Pb、Cr、Cu、Co等均未测出,且含有16种氨基酸,总量为22.79μg·L-1。

Abstract:In this paper, coix seed and Chinese wolfberry were used to produce pure taste health beverage. With the help of the orthogonal test, the best formula was that sugar was 5%, citric acid was 0.2%, coix seed∶Chinese wolfberry was 3∶1. The properties of beverage were tested. The results showed that the soluble solid was 5.76%, pH was 5.42, reducing sugar was 17.9 mg·L-1. The contents of metal elements of Zn, Mg, Na, Fe, Mn, Ca, K were 0.004 5, 4.785 5, 35.102 0, 0.016 9, 0.006 0, 4.742 9, 22.369 0 g·L-1, respectively. There were no metal elements such as Cd, Pb, Cr, Cu and Co. The amino acids were also tested, the results showed that there were 16 kinds of amino acids and the total content was 22.798 μg·L-1.
