摘    要:
试验研究一种能够准确评价番茄硬度的测定方法,建立番茄在贮藏期间硬度变化的动力学模型。在分析测定番茄硬度变化的全过程后,认为番茄硬度和测定硬度时的变形量应同时用于评价番茄的品质。研究表明,番茄硬度在贮藏期间的变化符合一级动力学模型,通过试验确定模型的参数,对新鲜番茄初硬度进行测定,可预测番茄的品质变化,为番茄的采摘和贮运提供理论依据。

Abstract:
Firmness is an important aspect of the quality of fresh tomatoes. This study developed a method for measuring firmness of tomato and determined the kinetic model of firmness changes on tomato tissue during storage. Data analyzing in whole course was recorded by impact sensor, and the firmness and distortion were used to evaluate tomato tissue synchronously. Result showed the firmness in tomato fruits during storage followed a first order reaction kinetics. Confirming the parameters by the test, this model can be used to predict and control the quality changes of tomato fruits. The method can be applied to the harvesting storage and transportation.
