蚕蛹脱脂与除臭工艺的研究

摘    要:目的]探讨蚕蛹浸取脂肪和除臭的理想方法,为最终获得符合国家标准的优质蛋白粉和对蚕蛹资源的合理开发利用作铺垫。方法]用Na2CO3溶液对蚕蛹进行脱脂除臭,并对影响脱脂效果的3个主要因素Na2CO3浓度、浸泡时间、料液比(即蚕蛹质量与溶液体积之比)进行L9(33)正交优化试验。采用索氏提取法提取蚕蛹油,凯式定氮法测定粗蛋白含量。结果]蚕蛹脱脂除臭的最佳工艺条件:Na2CO3浓度为2%,浸泡时间为12 h,料液比为1∶2时,蚕蛹脱脂效果最好。同时Na2CO3处理对蚕蛹的粗蛋白含量没有太大影响,且经Na2CO3处理后的蚕蛹在颜色、气味和质地上都得到改善,达到预期效果。结论]采用Na2CO3处理蚕蛹,具有药剂价格便宜、脱脂效果好、蛋白质含量影响小、不污染蚕蛹等优点,且此方法操作简便、技术要求不高,适合于我国民间小规模蚕蛹饲料加工。
