摘    要:目的]研究壳低聚糖纳米粒子对大肠杆菌的抑制作用。方法]利用离子交联法制备壳低聚糖纳米粒子,并通过比浊法和平板涂布法检测其对大肠杆菌的抑制效果。结果]制备的壳低聚糖纳米粒子粒径约60nm,在试验浓度范围内对大肠杆菌均有一定的抑制作用,抑菌率均明显高于同浓度壳低聚糖,最大抑菌率达87.0%。结论]对壳低聚糖进行纳米化改性,可以显著增强其对大肠杆菌的抑制效果。
