摘    要:目的]为提取紫藤花色苷寻求一种好的方法。方法]采用正交试验研究了紫藤花色苷的提取条件,并探讨其理化性质。结果]用料液比1∶20,90%乙醇和1%盐酸在45℃条件下浸提3h,提取效率最好;花色苷色素溶液的颜色随着溶液pH值的改变而变化,金属离子Na^+、Cu^2+、Zn^2+、Mg^2+对花色苷色素颜色无影响;色素溶液的氧化性、还原性均较差;蔗糖、葡萄糖和柠檬酸等食品添加剂对色素稳定性均无显著影响。结论]紫藤花色苷是一种有前途的天然色素。

Abstract:Objective]The aim of the study was to seek a good method to extract Wisteria sinensis anthocyanin.Method]Physico-chemical properties and extractions condition of Wisteria sinensis anthocyanin were explored Result] The study showed that good yield of pigment could be obtained by 90% ethanol and 1% hydrochloride at 45 ℃ for 3 h with the solid-liquid ratio 1∶20.The colour of pigment solution changed with the pH value of solution.Metallicions Na+,Cu2+,Zn2+,Mg2+ had no effect on the color of anthocyan pigment.Oxidation and reduction performance of the pigment solution had poor;Sucrose,glucose and citric acid and other food additives had no significant effect on the pigment.
