摘    要:为了探讨快速准确的测定杏果实中的糖、酸组分及其含量的方法,采用高效液相色谱法测定了5个杏品种果肉中的可溶性糖和有机酸,结果表明杏果肉中的可溶性糖为蔗糖、葡萄糖、果糖、山梨糖醇,其中前3种为主要糖,并且蔗糖含量明显高于其他3种糖的含量;杏果肉中的有机酸包括苹果酸、柠檬酸和奎宁酸,前两种酸为主要酸。利用高效液相色谱法可以成功地测定出杏果实中的糖、酸组分及其含量,并且具有良好的精确度、回收率和重复性。

Abstract:HPLC (High Performance Liquid Chromatography) method was used for measuring the soluble sugar and organic acid contents of 5 apricot cultivars in this study.
