摘    要:化学指纹图谱技术由化学指纹图谱收集和化学计量分析两个部分组成。化学指纹图谱收集技术主要包括液相色谱、气相色谱、红外光谱和质谱;化学计量法主要包括主成分分析、聚类分析、人工神经网络法和偏最小二乘判别分析法。化学指纹图谱检测技术目前已在茶叶溯源地区分、不同茶类和等级区分、茶树品种区分、茶叶陈新区分、数字化感官评价体系建立等方面有了良好研究进展,但相关技术仍需进一步深入和完善。

Abstract:This review systematically introduced the mechanism of fingerprint detection technology, including acquisition of chemical fingerprints and chemometrics. Chemical fingerprint detection technologies mainly include liquid chromatography, gas chromatography, infrared spectroscopy and mass spectrometry. Chemometrics mainly include principal component analysis, cluster analysis, artificial neural network method and partial least squares-discriminant analysis. Besides, the applications of fingerprint detection technology in tea research field were classified, including discrimination of the origin of tea, types and grades of tea, tea cultivars, storage age of tea as well as establishment of digital sensory evaluation system. This review aims to promote and complete the application of fingerprint detection technology in tea research field.
