摘    要:阐述了蔬菜中硝酸盐和亚硝酸盐分析方法的研究现状,重点讨论了硝酸盐和亚硝酸盐的测定原理、定量分析和影响因素。结果表明,离子色谱法具有灵敏度高,选择性好,操作简便等特点,较其它方法更适合同时测定蔬菜中硝酸盐和亚硝酸盐的含量。

Abstract:The progresses on study of the method for nitrate and nitrite determination in vegetables are reviewed with 31 references. The mechanisms of determination, quantitative analysis and effect factors are discussed. The results show that ion chromatography seems to be one of the most effective and simple to determine nitrite and nitrate in vegetables owing to its high sensitivity, selectivity, rapidity and simplicity coupled with the advantage of simultaneous determinations.
