| 摘 要： | 以新鲜天然椰子水为材料,研究其抗氧化活性,结果表明:天然椰子水对超氧阴离子自由基(O2-·)、DPPH·自由基和羟基自由基(·OH)都有较强的清除能力,有一定的还原能力,但对Fe2+的络合能力较弱.说明天然椰子水的抗氧化活性较强,具有很好的保健功效.

| Abstract: | Fresh natural coconut water was used to analyze its anti-oxidative activities. The results showed that natural coconut water was higher in super-oxide radical scavenging activity, reducing power, DPPH radical scavenging activity and hydroxyl radical scavenging activity. But it had a low metal chelating activity when compared with other three antioxidants. This indicates that coconut water has very high antioxidation activities and hence good healthcare function. |
