云南高原山地油茶籽油脂肪酸组成及品质分析

为了解云南高原山地油茶籽油品质及其脂肪酸组成和含量,以云南高原山地主产区初选的37株油茶优树为研究对象,检测分析37株油茶优树的油茶籽油。结果表明:云南高原山地油茶籽油平均含油率为46.87%,油脂主要由油酸、亚油酸、棕榈酸、硬脂酸、亚麻酸等脂肪酸组成,其中不饱和脂肪酸含量占90%左右,油酸含量72.52%~84.78%、亚油酸含量4.85%~13.74%、亚麻酸含量0.45%~1.30%;饱和脂肪酸含量占10%左右,棕榈酸含量6.44%~10.99%、硬脂酸含量1.09%~2.98%。同时,与其他省区的油茶籽油、市场上销售的主要植物食用油进行对比分析,发现云南油茶籽油脂肪酸组成及其比例优于其他油脂,是一款优质的木本食用油。最后采用模糊综合评判法,对初选37株优树的油脂品质进行综合评比,富宁17号综合品质最佳,其余依次为富宁11号、富宁2号、富宁3号、广南9号等。

Fatty Acid Composition and Quality Analysis of Camellia oil in Yunnan Plateau

In order to understand the quality of Camellia oil in Yunnan Plateau and its fatty acid composition and content,this paper takes seeds of 37 superior trees in the main plateau of Yunnan Plateau as the test material,and analyzes Camellia seed oils.The results showed that the average oil content of Camellia oil in the Yunnan Plateau was 46.87%,Camellia oil was mainly composed by oleic acid,linoleic acid,palmitic acid,stearic acid,and linolenic acid.The content of unsaturated fatty acid was about 90%,oleic acid content 72.52%~84.78%,linoleic acid content 4.85%~13.74%,linoleic acid content 0.45%~1.30%;saturated fatty acid content accounts for about 10%,palmitic acid content 6.44%~10.99%,stearic acid content 1.09%~2.98%.At the same time,a comparative analysis with Camellia seed oil in other provinces and major vegetable edible oils sold on the market revealed that the fatty acid composition and ratio of Yunnan Camellia seed oil is better than other oils,which was a high-quality woody edible oil.Finally,a fuzzy comprehensive evaluation method was used to comprehensively evaluate the Camellia oil quality of 37 superior trees.
