摘    要:
食品安全已经成为世界性的公共卫生问题,食源性致病菌是引起食源性疾病的首要原因。文章详细论述了几种主要引起食源性疾病的致病菌-沙门氏菌、弯曲杆菌、大肠杆菌、李斯特菌霍乱弧菌的治病机理及临床表现,并讨论了食源性疾病的流行病学变化以及监控。

Abstract:
Food safety had become an important public healthy issue all over the word.The pathogenic mechanisms and clinical symptoms of several important foodborne pathogens,including Salmonella,Escherichia,Campylobacteri,Listeria and Cholera,were summarized,the epidemiology change of foodborne disease and the surveilance measures were discussed in the paper.
