2011年河南省仓储小麦品质状况研究

摘    要:通过对仓库存储的2011年新收获的27份小麦样品进行检测,分析其籽粒品质及面团流变学特性,结果表明,2011年仓储小麦中,100%的小麦样品容重达到三等及以上,59.26%的小麦样品籽粒粗蛋白质含量在14.0%以上,22.22%的小麦样品湿面筋含量在32.0%以上,40.74%的小麦样品稳定时间在7.0min以上,88.89%小麦样品的降落数值在300s以上,达到优质小麦-强筋小麦品质标准(GB/T17892-1999)的规定。

Abstract:27 stored wheat samples newly harvested in 2011 were tested. Its grain quality and dough rheology characteristic had been analized. The results showed that, the test weight of 100% wheat samples was more than 770g/L, the grain protein content of 59.26% wheat samples was more than 14.0%, the wet gluten content of 22.22% wheat samples was more than 32.0%, the dough stability time of 40.74% wheat samples was more than 7.0 min, the falling number of 88.89 % wheat samples was more than 300s, which all reached the requirements of wheat quality standard GB/T17892--1999.
