摘    要:利用甲醇和超声波提取酿酒葡萄‘Granoir’中的花色素苷,利用高效液相色谱分别测定了该葡萄及酒中的花色素苷。在测得的9种花色素苷中,均以二甲花翠素3-O-葡萄糖苷含量最高,分别占总成分的39.71%和69.55%,其次为二甲花翠素3-O-(6-O-对香豆酰)葡萄糖苷,构成了Granoir葡萄及葡萄酒中的主要呈色成分。

Abstract:Anthocyanin in 'Granoir' grape was extracted with methanol and ultrasonic,and the anthocyanin in 'Granoir' grape and 'Granoir' wine was detected with HPLC. Among the 9 anthocyanins,the content of malvidin 3-O-glucoside was the highest in 'Granoir' grape and wine,and the respective contents were 39.71% and 69.55%,secondly was malvidin 3-O-(6-O-p-coumaryl) glucoside.These anthocyanins in 'Granoir' grape and wine were main pigments.
