黑莓果渣的营养成分与利用价值分析

摘    要:为了提高黑莓果品的利用价值,通过分析黑莓果渣的营养成分,结果发现,黑莓果渣含有多种具有营养保健功能的成分。其中粗蛋白14.00%,粗脂肪10.78%,粗纤维30.74%,还原糖3.02%,可滴定酸1.43%,灰分1.88%,多酚4.54%,花色苷0.14%。蛋白质组分中含有18种氨基酸,8种必需氨基酸都有,必需氨基酸占氨基酸总量的36.03%;油脂组分中不饱和脂肪酸占93.00%,其中亚油酸含量占69.28%。根据果渣的营养成分,可以研制黑莓色素、种子油、植物蛋白、植物纤维等精深加工产品,可以加工生产黑莓果渣饲料和果渣复合有机肥料等常规产品。

Abstract:The nutrient contents of blackberry fruit residue were determined,and the results showed that the content of crude protein was 14.00%,crude fat was 10.78%,crude fiber was 30.74%,reducing sugar was 3.02%,titratable acid was 1.43%,ash was 1.88%,polyphenol was 4.54% and anthocyanin was 0.14%.Eighteen kinds of amino acids were detected in residue protein,and the content of 8 essential amino acids accounted for 36.03% of all amino acids.The content of unsaturated fatty acid was 93.00% in fat and the linoleic aci...
