增智金针菇液体发酵保健饮料的研究

摘    要:
以金针菇菌丝体及其发酵液为主要原料,研制出金针菇液体发酵饮料。试验采用液体深层发酵技术,对金针菇菌丝体进行发酵培养,选出最佳发酵时间,以获得发酵液及菌丝体。通过正交实验和感官评定,调配出金针菇增智发酵保健饮料的最佳配方为:苹果酸0.08%,白砂糖8%,柠檬酸0.2%,果胶0.1%,CMC0.2%。

Develops the lily flower liquid fermentation drink take the lily flower fermentation fluid and the mycelium as the primary data.The experiment uses the liquid in-depth fermentation technology to carry on the fermentation raise to the lily flower mycelium,Selects the best fermentation temperature and the fermentation time,obtains the fermentation fluid and the mycelium.Through the orthogonal experiment,the sense organ evaluation,mixes has the good sense organ character to increase the wisdom fermentation hea...
