摘    要:为开发毛尖茶资源,采用SPME/GC-MS方法分析茶样中香气成分。结果表明:茶样Ⅰ中鉴定出92种香气物质,烷烃类27种、酯类17种、醛类12种、烯烃类11种、酮类10种、醇类7种、杂环类5种、苯类3种;茶样Ⅱ中鉴定出89种香气物质,烷烃类27种、酯类13种、烯烃类12种、醛类11种、酮类10种、醇类8种、杂环类6种、苯类2种。茶样Ⅰ和茶样Ⅱ中共有香气成分78种,特有香气成分分别有14种和11种。茶样Ⅰ和茶样Ⅱ的萜烯指数分别为0.950 8和0.785 3。

Abstract:Aroma components in tea samples were analyzed using SPME coupled with GC-MS method,so as to exploit Maojian Tea resources.Results:92 kinds of aroma compounds were identified in tea samples Ⅰ,including 27 hydrocarbons,17 esters,12 aldehydes,11 olefins,10 ketones,7 alcohols,5 heterocyclic,3 benzene.89 kinds of aroma compounds were identified in tea samples Ⅱ,27 alkanes,13 esters,12 olefins,11 aldehydes,10 ketones,8 alcohols,6 heterocyclic,2 benzene.Tea sample Ⅰ and Ⅱ share a total of 78 kinds of aroma components,while unique ones are 14 and 11 kinds respectively.And the terpene indexes of tea sample Ⅰ and Ⅱ were respectively 0.950 8 and 0.785 3.
