葡萄中原花青素的代谢

摘    要:原花青素是植物中广泛存在的一大类多酚化合物的总称,具有极强的抗氧化、消除自由基等的 作用。葡萄籽中所含的原花青素含量高、种类丰富,已越来越受到医药界、营养界的重视。了解葡萄中原花青素的代谢及重要研究进展对于原花青素的代谢调控、原花青素更好的利用以及葡萄果实品质提高等具有重要帮助。鉴于此,本文简要介绍了葡萄中原花青素的结构、分类、代谢途径以及相关重要酶的活性研究进展。

Abstract:Proanthocyanidins, a class of bioflavanoids found in many plants, can work as an effective antioxidant and eliminate free radicial etc., which have made it to be developed into nutritional or therapeutic supplements in the World. Among the fruit crops, grape seed is the most common and richest source of proanthocyanidins, and has gain attention of medical researchers and nutritionists. The collection of the information about the metabolism of proanthocyanidins in grape and some related scientific research discoveries can be great help to us for the regulation of the metabolic pathway, more efficient utilization of proanthocyanidins, and the improvement of grape quality, based on which we briefly introduce the molecular structures, the classification, and the metabolic pathway of proanthocyanidins. The research advances of the important enzymes involved in the metabolic pathway are also emphasized.
