太湖鹅生长和屠宰性能以及肉品质的分析

以国家水禽种质资源基因库引进的太湖鹅为素材,对其生长、生产性能和肉品质进行研究。结果表明:7周龄前,太湖鹅体重在性别间无显著差异,7周龄后公鹅的体重显著高于母鹅的体重;公鹅的宰前活重、屠宰重、半净膛重、全净膛重、肝重、心重显著高于母鹅;母鹅胸肌嫩度显著低于公鹅,其他指标在性别间无显著差异。体重与体尺、屠宰性能、肉品质多数指标存在极显著的正相关。

Analysis on growth performance, carcass trait and meat quality of the Taihu goose

This paper was based on the Taihu goose,conserved in National Waterfowl Germplasm Resource Pool,which was studied on growth performance,production capability and meat quality.The results suggested the body weight of goose was not significantly different between sexes before 7-week old,and the body weight of male goose was significantly higher than female goose after 7-week old.The alive weight,slaughter weight,semi-eviscerated weight,eviscerated weight,liver weight and heart weight of male goose were significantly higher than female goose.The tenderness of female goose breast muscle was significantly lower than that of male goose,and other indexes of meat quality were not significantly different between sexes.There were significantly positive correlations among most indexes of the body weight and body size,most indexes of slaughter traits and meat quality.
