摘    要:镉是一种化学性污染物,长期接触重金属镉可使人体各大组织器官及生理系统受到损伤。伴随着工农业的快速发展,贝类受到重金属镉污染,出现的镉残留的现象变得日趋严重。本文综述了重金属镉的不同形态和毒性,以及当前在贝类中的污染现状和富集规律,整理归纳了贝类中重金属镉的检测方法,并论述了贝类中镉残留的安全性问题,同时采用风险评估方法对贝类产品中的镉进行风险分析和评价,旨在为贝类的质量安全研究提供一定的技术参考。

Abstract:Cadmium is a chemical pollutant, which could do harm to the internal organs and physiological systems of human’s body by long?term exposure. Cadmium pollution is increasing seriously in shellfish with the development of industry and agriculture. This review covers the current status and toxicity of cadmium, cadmium contamination and bioaccumulation in shellfish, the commonly?used methods for the detection of cadmium. Meanwhile, the security problems of cadmium residue in shellfish were also discussed and the risk of cadmium in shellfish was analyzed and evaluated by the method of risk assessment, which would provide technological references for future studies on the quality and safety of shellfish.
