清真畜产品质量溯源系统的研究与应用

摘    要:针对宁夏清真牛肉生产过程的溯源模式进行研究,提出以屠宰批次进行牛肉质量溯源和清真食品生产过程溯源的方案。针对超市、屠宰厂、养殖阶段信息采集和编码的不同分为3级溯源模式。用户以溯源号追溯到销售信息、屠宰批次号及屠宰信息:以屠宰批次号追溯到该批次所有牛臾的牛耳编号信息;以牛耳编号追溯到每头牛的养殖信息、饲料信息。一次完整的溯源过程系统涉及到养殖、饲料、屠宰、运输、销售等多个环节信息。该系统已经在宁夏多家牛肉屠宰企业应用,应用效果良好。
