摘    要:目的]将HACCP体系运用到搅拌型蓝莓酸牛乳的生产工艺中。方法]应用HACCP体系的基本原理和方法,分析了搅拌型酸牛乳加工生产中可能出现的主要质量安全问题和关键环节,确定关键控制点及相应的监控与预防措施。结果]研究制定了搅拌型蓝莓酸牛乳生产的HACCP计划,能有效控制生产过程中对酸牛乳的危害,保证食品的安全,被公认为是全世界范围的食品安全生产准则。结论]HACCP体系应用于搅拌型蓝莓酸牛乳生产工艺中,可有效保证产品的质量安全,提高酸牛乳生产管理水平。

Abstract: Objective ] To study the application of HACCP system in production process of stirring blueberry yoghurt. Method] By using the basic principle and method of HACCP system, the main quality problems and key links in the production process of stirring blueberry yoghurt were analyzed, the key controlling points and corresponding monitoring and prevention measures were determined. Result] The HACCP plan for stirring blueberry yoghurt production was made, which can effectively control damage to yoghurt and guarantee food safety. Conclusion] The ap- plication of HACCP system in the production process of stirring blueberry yoghurt could effectively guarantee the quality safety of products and im- prove the management level of yoghurt production.
