摘    要:当前新冠肺炎疫情严重冲击了乳业的正常生产,造成了多地原料乳积压无法消化。发展干酪产业,完善我国乳业产业结构,增强乳业抗风险能力再次成为行业讨论的热点。本文在简要阐述世界干酪产业现状的同时,分析了干酪生产在乳业产业链中的作用,分析了当前影响我国干酪产业发展的主要因素,并针对性地提出了建议。

Abstract:The recent epidemic outbreak of COVID-19 has severely impacted the normal production in dairy industry, causing overstock of raw milk in many places. Under this situation, the development of cheese industry to improve the dairy industry structure, and strengthen the industry’s ability to resist risks has become the focus of discussion. This work briefly described the status quo of the world cheese industry, specifically the roles of cheese processing in the dairy industry chain, and analyzed main factors affecting the current development of cheese industry in China, and suggestions were proposed.
