| 摘 要： | 简述不同科属紫背天葵特点，评述药食同源植物紫背天葵繁殖、栽培及病虫害防治等人工驯化栽培研究现状；总结紫背天葵食用特点、多种营养成分、特殊保健功效、花青素变化、挥发油和总黄酮等提取、元素分布及其与土壤的相关性研究；归纳紫背天葵保健品开发及红色素提取等相关加工利用研究。提出紫背天葵相关深加工研究、保健品开发方向；展望了紫背天葵品种间比较研究及筛选、新品种选育以及相关功能基因克隆运用方面分子生物学研究方向。
