摘    要:目的]探究大红菇类胡萝卜素的最佳提取工艺条件,为云南野生红菇类食用菌色素的开发利用提供科学依据.方法]以云南野生大红菇子实体为原料,采用单因素试验与正交试验相结合的方法优化大红菇类胡萝卜素的提取工艺条件.结果]影响大红菇类胡萝卜素提取的因素排序为:料液比>浸提温度>浸提时间;其最佳提取工艺条件为:以丙酮∶95%乙醇∶石油醚(6∶3∶1)混合液为提取溶剂,料液比1∶3,浸提温度55℃,浸提时间50 min.在此工艺条件下可获得最佳提取效果,类胡萝卜素提取量在0.225 mg/g以上.结论]用正交试验设计优化大红菇类胡萝卜素提取工艺是可行的.

Abstract:Objective]The optimum extraction process for carotenoids from Russula alutacea Fr. was studied to provide scientific references for the development and utilization of edible pigment from wild Russula mushrooms in Yunnan. Method] Using wild R. alutacea sporocarp as raw materials, the extraction process for carotenoids was optimized by combining single factor tests and orthogonal experiment method. Result]The influence factors on extracting for carotenoids from R. alutacea were in order as material liquid ratio〉 extraction temperature〉 extraction time. The results also showed that, with ace- tone : 95% ethanol:petroleum ether (6:3:1) mixture as extraction solvent, the optimal extraction process was obtained as follows: material liquid ratio of 1:3 (g/mL), extraction temperature of 55 ~C, and extraction time of 50 min. In these condi- tions, the extraction of carotenoids from R. alutacea was the/~est and extracting amount was more than 0.225 mg/g. Conclu- sion]Using orthogonal experimental design to optimize extraction process for carotenoids from R. alutacea is feasible.
