Abstract: | The weight loss rate, respiration rate, rotted fruit rate, chlorophyll content, hardness and soluble solids were analysised using sodium alginate, gelatin, chitosan, stearic acid as film coating materials to the small cucumber. The results showed that, the first layer with sodium alginate / gelatin (1%/0.3%) and the second layer with stearic acid / salad (1 g/2 mL) could inhibit the respiration of the small cucumber and prevent decomposition of soluble solids effectively. |
