Abstract:The national standard Iron-Alum method(GB/T 5009.128-2003) was studied for etermination of sterol content in the transesterificational vegetable oil,and the optimum coloring conditions were confirmed through analyzed the results and compared with the improved Lieberman-Burchard colorimetric method and digitonin method.The results showed that the optimum coloring conditions of the national standard Iron-Alum method were as following: coloring reagent volume was 2 mL,coloring reagent ratio was 1∶9,and coloring time was 15 min.Therefore,the average relative error and reproducibility is 4.54% and 98.61% by using the national standard Iron-Alum method for determination of high content of sterol in the transesterificational vegetable oil.The method can be used as a quick and simple supervise method for the study of functional oil appended with sterol and industrial product.
