固定化酶及其在食品工业中的应用

摘    要:
固定化酶是酶工程的核心技术之一,有利于实验酶的重复使用及产物与酶的分离,将酶工程提高到一个新的水平,极大地促进了酶工程的研究与应用,并广泛应用于各个领域。综述了固定化酶的制备方法,总结了其在食品工业中的应用,并对其的发展进行了展望。

Abstract:
Immobilized enzyme is the core of the enzyme engineering,it benefits the reuse of enzyme and separation of the production and enzyme,advances the enzyme technology level.The technology of immobilized enzyme promotes the research and application of enzyme enginearing.And now immobilized enzyme has been widely used.The immobilized method was introduced,then the application of immobilized enzyme in food industry was summarized,and the future prospect of this technology was expounded in the end.
