摘    要:目的]对石榴(Punica granatum Linn.)籽主要成分进行分析。方法]测定石榴籽水分、蛋白质、脂肪、灰分、黄酮类物质和单宁含量,并分析石榴籽油脂肪酸组成成分和干燥脱脂石榴籽蛋白质中氨基酸成分。结果]石榴籽中蛋白质和脂肪含量相对较高,其含量分别为13.62%、20.29%,石榴籽油中含有8种不饱和脂肪酸和4种饱和脂肪酸,其中不饱和脂肪酸相对含量为92.22%,9,12,15-十八碳三烯酸占82.76%。石榴籽蛋白质中氨基酸组成较完全,其中必需氨基酸含量为31.98%。结论]该研究可为石榴籽的进一步利用奠定理论基础。

Components Analysis of Punica granatum Linn. Seed

Abstract:Objective]The research aimed to analyze the components of Punica granatum Linn.seed.Result] The water,protein,fat,ash,flavonoid and tannin contents were determined,and the fatty acid components of Punica granatum Linn.seed oil and protein components of dry Punica granatum Linn.seed were analyzed.Result]The results showed that the content of protein and fatty acid in Punica granatum Linn.seed was 13.62%and 20.29%respectively.Punica granatum Linn.seed oil contained 8 kinds of unsaturated fatty acids and 4 kinds of saturated fatty acids.Thereinto,the content of unsaturated fatty acids was 92.22%.The content of 9,12,15-calendic acid was 82.76%.Amino acid components of protein in Punica granatumLinn.seed were complete.The content of necessary amino acid was 31.98%.Conclusion] The study can lay the theovetical basis for deeply using Punica granatum Linn.seed.
