Abstract:Preservation of cut vegetable on high pressure is a high technology. High pressure processing (HPP) has the advantages of reduced process times, minimal heat penetration/heat damage problems, better retentions of freshness, flavor and color, minimal vitamin C loss, and smaller functionality alterations. Therefore, more and more people paid more attention to the technique. The development and characteristics of high pressure preservation were introduced, the effects of high pressure on vegetables were expatiated, and some advices on how to develop the technique were put forward.
