牛羊奶主要营养成分的比较研究

摘    要:选择12头(只)同胎和同泌乳月的奶牛和奶山羊,饲喂相同种类的饲料,比较研究牛羊奶主要营养成分的差异。结果表明,牛奶乳糖含量显著高于山羊奶(P <0.05);牛奶中胱氨酸、缬氨酸、异亮氨酸、亮氨酸、酪氨酸、苯丙氨酸高于山羊奶,其他11种氨基酸均低于山羊奶;山羊奶的短链脂肪酸比牛奶高5.5倍,其中乙酸高13.6倍,而牛奶的不饱和脂肪酸则高于山羊奶;牛奶钠的含量为山羊奶的7倍,牛奶钾含量仅为山羊奶的53.2%,而微量元素差异不明显。以上这些比较分析对科学评价、饮用及加工牛羊奶有重要意义。

Abstract:The principal nutrient composition of 2 kinds of milk has been comparely studied by 12 dairy cows and goats with the same feed and fetus times and lactating month. The result showed that the lactose content of the cow milk was markedly higher than that of the dairy goat milk ( P <0. 05). The contents of cystine. valine. isoleucine. leucine. tyrosine. phenyialanine in the cow milk were higher than that of the goat milk, but the other 11 kinds of amino acids in the cow milk were lower than that of the goat milk. Short-chain fatty acid of goat milk was 5. 5 times than the cow milk, and the content of ethanoic acid in the goat milk was13. 6 times than the cow milk, but nonsatruate fatty acid of the cow milk was outstandingly higher than the goat milk. The content of Na in the cow milk was 7 times than the goat milk, but the conent of K in the cow milk was only 53. 2 % of the goat milk, and there has no great differences of the micro minerals contents between the cow and goat milk. These above results were of importance in science evaluating, feeding and drinking, and processing the cow and goat milk.
