迪庆藏猪肉质特性的研究

摘    要: 迪庆藏猪属于典型的高原型猪种之一,对其肌肉品质进行分析。结果表明:迪庆藏猪各项肉质指标均符合优质肉范畴,肉质优良;3个肌肉部位(背最长肌、腰大肌、股二头肌)的肌纤维直径均较撒坝猪相应3个部位肌纤维直径大,但是其3个部位肌纤维密度均比撒坝猪相应3个部位肌纤维密度大;迪庆藏猪肉是一种高蛋白、低脂肪的肉类食物,并且对人体健康有益的不饱和脂肪酸含量、必需脂肪酸含量均较高,比较符合现代人的消费需求,具有较高的食用价值。

Abstract:Diqing Tibetan pig is a kind of typical altiplano pig breed.Meat quality was analyzed.The results showed that every meat quality index is included in high quality meat category.Muscle fibre diameter in back first born muscle,waist big muscle and thigh biceps is larger than Saba big,but muscle fibre density in the three part is higher than Saba pig.Diqing Tibetan pig meat is a kind of high albumen,low fat and high unsaturated fatty acid content meat food,and it has high edible value.
