摘    要:综述了近年来国内外桃果实中花青素的研究进展,包括桃果实中花青素的提取方法、检测方法、药理活性研究以及影响其合成的因素等。指出桃果实中花青素的提取方法主要有溶剂提取法、加压溶剂萃取法、超高压辅助提取法、微波辅助提取法和超声波辅助提取法等,其中溶剂提取法最常见:检测方法主要有pH示差法和HPLC;影响其合成的因素主要有套袋、γ射线、光照、外源性激素、可溶性糖、可滴定酸、酶和基因等;其具有抗氧化、抗突变、抗癌及保护心血管等作用。

Research Progress of Anthocyanin in Peach Fruit

Abstract:The research progress of anthocyanin in peach fruit at home and abroad in recent years have been summarized,which include the extraction methods,detection methods,pharmacological activities research and the factors that affect the synthesis of anthocyanin in peach fruit,etc..In addition,it points out that the main extraction methods of anthocyanin in peach fruit are solvent extraction method,pressurized solvent extraction method,ultra-high pressure assisted extraction method,microwave-assisted extraction method and ultrasonic-assisted extraction method,etc.,hereinto,the solvent extraction method is the most common;the detection methods mainly contain pH differential method and HPLC;the factors that affect the synthesis of anthocyanin include bagging,γ-ray,illumination,exogenous hormones,soluble sugar,titratable acid,enzyme and gene,etc.,moreover,anthocyanin has the functions of antioxidation,antimutagenic effect,anticancer effect and cardiovascular system protection.
