以酵母菌、芽孢杆菌、乳酸菌及其复合菌为试验菌株,对影响菌株稳定性的因素——pH值、温度、盐浓度、抗生素等进行了研究。结果表明:复合配伍菌株XN-1在35～40℃、pH值为5.5～7.0、NaCl浓度为0.4%～0.7%时生长良好,并对所用抗生素都有不同程度的敏感性。
