鸡腿蘑液体菌种生产及栽培试验研究

摘    要:用深层发酵法进行鸡腿蘑液体菌种的生产,从5个鸡腿蘑品种中,确定了一株适于深层发酵的菌株一瑞10,该菌株较适宜的液体培养基组分为:4%玉米粉,2%蔗糖,2%麸皮,0.1%KH2PO4,0.05%MgSO4.7H2O,适宜的摇瓶条件为:培养基的起始pH值为7,250mL摇瓶装液量为40mL,接种量为10%,培养温度25℃.15L发酵罐控制参数为:装料系数0.7,接种量10%,通气量:1:0.5-1.2,搅拌速度为120-180r.min^-1,用液体菌种进行鸡腿蘑栽培试验结果显示,深层发酵法生产鸡腿蘑比传统栽培方式生产周期可缩短60d,抗杂性能优于传统生产方式,出菇性能与传统生产式无显著差异。

Abstract:A strain suitable for subm eraged fermentation was selected from fi ve strains of Coprinus comatus.The st rai n’s suitable composition of fermentatio n medium was as follows:4% maize powder ,2% sugar,2% wheat bran,0.1% KH2PO 4,0.05% MgSO4*7H2O.The optimal shaking culture conditions were as follows:pH7,4 0 mL medium in size 250mL flask,inoculat ion 10%,temperature 25℃.Fermentation pro cess controls were as follows:operationa l volume factor 0.7,inoculation 10%,gas through-puts 1∶0.5~1.2,mixing rate 120~18 0 r*mi n-1.The Coprinus comatus cultivation wi th liguid inoculum showed the production period was reduced by 60 days and the r esistance to contamination was better th an that produced in the traditional way, and thre wasn’t significant difference i n the productivity between the two ways.
