应县紫皮大蒜的营养成分及抗病化学成分的研究

摘    要:我国是世界上大蒜种植的第一大国,资源十分丰富。山西省应县的紫皮大蒜在国内久负盛名。所以本文介绍了应县紫皮大蒜的营养成分,并与山东苍山县大蒜作了比较,具有食疗价值;同时分析了大蒜杀菌、抗癌功能的主要化学成分。为山西省大蒜资源的开发利用提供了比较全面系统的资料。

Abstract:China is rich in garlic resource.Purple garlic of Ying county is famous with its quality.This paper introduces purple garlic nutrient components and compares with garlic of Shandong Cangshan.It also discusses medical value of garlic and analyses its major chemical compositions that have bactericidal and anticancer functions.The paper gives detailed,systematic data for exploitation and utilization of garlic resource in Shanxi.
