西葫芦水溶性多糖抗氧化性的研究

摘    要:目的]为西葫芦多糖的药物和功能性食品开发提供科学依据。方法]采用热水浸提法提取西葫芦可溶性多糖;采用蒽酮-硫酸法测定多糖的含量。羟自由基由Fenton体系产生;超氧自由基由邻苯三酚自氧化体系产生。结果]在37℃下,乙醇用量是提取液体积的4倍,药物浓度为2 mg/ml时,其产物对羟自由基的清除率为37.1%。在25℃下,乙醇用量是提取液体积的4倍,药物浓度为2mg/ml时,其产物对超氧自由基的清除率为23.3%。结论]西葫芦多糖对超氧自由基和羟基自由基均有明显清除作用。

Abstract:Objective] The research aimed to provide the scientific basis for the development of the medicine and functional food with Cucurbita pepo L polysaccharide.Method] Crude Cucurbita pepo L polysaccharide was extracted from Cucurbita pepo L by hot-water extraction.The content of polysaccharides was measured by anthrone-sulfuric acid method.·OH-was produced by Fenton reaction,and·O2-was produced by the oxidation of pyrogallic acid.Result]When the concentration of Cucurbita pepo L polysaccharide was 2 mg/ml in 37 ℃,and the alcohol quantity was 4 times the volume of ASPs filtrate,the elimination rate of the production to·OH-reached 37.1%.When the concentration of Cucurbita pepo L polysaccharide was 2 mg/ml in 25 ℃,and the quantity alcohol was 4 times the volume of ASPs filtrate,the elimination rate of the production to·OH-reached 23.3%.Conclusion] Cucurbita pepo L polysaccharide had the significant scavenging effect on O2-and·OH-.
