摘    要:为了考察薯类作物的热风干燥特性的异同点、优化薯类作物热风干燥工艺,本文选取4种薯类作物(红薯、马铃薯、芋头和山药),在不同温度(55、70、85℃)、切片厚度(3、5、7mm)和切法(横切、纵切)条件下进行比较,研究其热风干燥特性。结果表明:温度与切片厚度对4种物料的干燥特性影响一致,切法对4种物料的干燥特性影响略有差别,但不明显。通过比较,发现它们在热风干燥过程中各类指标变化基本一致,具有共性,在工业生产上可以进行归类,为薯类作物产业化生产提供了理论依据。

Comparative Study for Drying Characteristics of Hot Air Drying of Four Root and Tuber Crops
Abstract:In order to examine the differences and similarities between hot air drying characteristics of root and tuber crops,opeimize the hot air drying process, this paper selected four root and tuber crops ( sweet potato, potato, taro, yam) , comparative study for their drying characteristics under different temperature ( 55℃, 70℃, 85℃) , slice thick-ness(3mm, 5mm, 7mm) and mode of cutting(transverse and longitudinal cutting).The results shows that impact of temperature and slice thickness on drying characteristics of four material are same, the mode of cutting affects slightly dif-ferent, but not obvious.By comparison, they have same index change in the process of hot air drying, have similarity, can be classified in the industrial production, provides theoretical basic for root and tuber crops on industrialization pro-duction.
