摘 要: | [目的]为苹果渣中多酚物质的开发利用提供基础资料。[方法]以苹果渣为材料,利用有机溶剂(甲醇、乙醇、丙酮)提取其中的多酚物质;以没食子酸为标准品,采用福林法测定苹果渣中多酚物质的含量,并通过正交试验研究有机溶剂浓度、料液比、提取时间、提取温度对多酚提取量的影响。[结果]试验确定乙醇为最佳提取溶剂;各因素对多酚物质提取量的影响依次为提取时间〉提取温度〉乙醇浓度=料液比;用乙醇溶液提取苹果渣中多酚物质的最佳工艺条件为乙醇浓度70%,提取温度20℃,提取时间1h,料液比1∶14。[结论]该研究确定了苹果渣中多酚物质的最佳提取工艺。

Abstract: | [Objective] The aim was to supply base data for exploitation of polyphenols from apple residue.[Method] With apple residue as material,its polyphenols were extracted by using organic solvents(methanol,ethanol and acetone).With galic acid as standard substance,the content of polyphenols in apple residue was determined by using Folin's methods.And the effects of organic solvent concn.,material-liquid ratio,extraction time and extraction temperature on extracted polyphenols amount were studied through orthogonal test.[Result] The ethanol was confirmed as optimum extraction solvent in experiment.The effects of various factors on extracted polyphenols amount were extraction time > extraction temperature > ethanol concn.=material-liquid ratio.The optimum technological condition for extraction of polyphenols from apple residue with ethanol solution was ethanol concn.of 70%,extraction temperature of 20 ℃,extraction time of 1 h and materil-liquid ratio of 1∶14.[Conclusion] In this study,the optimum extraction technology of polyphenols from apple residue was confirmed. |
