氯化钙对新疆不同品种枣裂果性的影响

摘    要:以新疆10个枣品种为试材,研究不同质量浓度的CaCl2(0、2.5、25g/L)分别浸果0、12、24、36、48、60、72h后不同质量品种枣的裂果率、果实硬度、可溶性固形物及吸水率的变化。结果表明,浸果12h内枣裂果率呈直线上升趋势,60h后裂果率基本稳定。其中赞皇大枣裂果率最高,骏枣次之,金铃圆枣最低;同一品种不同处理间枣的裂果率、吸水率、硬度差异显著。比较认为,极易裂品种为赞皇大枣、骏枣,极抗裂品种金铃园枣、冬枣;与0g/L CaCl2相比,25g/L CaCl2抗裂效果最好,2.5g/L CaCl2次之;裂果率与吸水率、可溶性固形物呈正相关,与硬度呈负相关。

Abstract:The indoor experiment was carried out with soaked jujube fruits to compare the fruit cracking of different cultivars and study the influence of CaCl2 on fruit cracking of jujube produced in Xinjiang. The fruits of ten jujube cultivars were immersed in different mass concentrations of CaCl2 (0, 2.5, 25 g/L) in seven stages of time (0, 12, 24, 36, 48, 60, 72 h) , and the change of cracking fruit rate, fruit firmness, soluble solids and water absorption were measured. Cracking rate of jujube fruit is linear upward in 12 h, then stable after 60 h.Zanhuangdazao had the highest cracking rate, followed by Junzao. Jinlingyuanzao has the lowest cracking rate among ten jujube cultivars. Fruit cracking rate, water absorption rate and hardness had significant difference among different treatments in same cultivar. The result indicated that Zanhuangdazao and Junzao have the lowest crack resistance, while Jinlingyuanzao and Dongzao have the highest crack resistance among ten cultivars. Compared with 0 g/L CaCl2, the 2.5 g/L CaCl2 had the higher crack resistance; the 25 g/L CaCl2 had the highest crack resistance among different treatments. Water absorption rate and soluble solids were positively correlated with the fruit cracking rate, and the fruit cracking rate was negatively correlated with hardness.
