摘    要:概述了糙米的营养价值,介绍了糙米食品的主要种类及其营养特征,分析了发芽糙米食品、糙米焙烤食品、速食糙米食品等主要糙米食品的生产工艺,并重点阐述了各糙米食品生产中的技术要点。

Research on the Processing Techniques of Brown Rice Food

Abstract:The nutritional value of brown rice was summarized. The major types and nutritional characteristics of food made by brown rice were introduced. Production processes of main brown rice food including germinated brown rice food, baked food and ready food made by brown rice were analyzed, and technical essentials of various types of brown rice foods in production were expounded emphatically.
