人工林木屑栽培玉木耳的营养成分及重金属含量分析

摘    要:以桉树、杨树和栎树3种人工林木屑为主料栽培玉木耳,比较3种木屑栽培玉木耳的总糖、粗蛋白、粗脂肪、粗纤维、氨基酸等营养成分的差异和重金属铅、镉的含量。结果表明,3种木屑栽培的玉木耳营养成分含量存在明显差异,杨树木屑栽培玉木耳除了总糖含量略低于栎树木屑外,粗脂肪、粗蛋白、粗纤维和氨基酸含量均显著高于其他配方,桉树木屑栽培玉木耳的营养成分效果最差。3种木屑栽培玉木耳的干耳片中重金属铅、镉含量均符合国家食品安全标准和绿色食品(食用菌)的要求。通过比较分析3种木屑栽培玉木耳的营养成分和重金属含量的差异,以期为利用3种木屑栽培食用菌的营养价值与质量安全提供参考依据。

Abstract:Ecalyptus sawdust,poplar sawdust and oak sawdust were used as main materials to cultivate Auricularia.cornea(Yumuer).The contents of total sugar,crude protein,crude fat,crude fiber,amino acid and heavy metal lead and cadmium in three kinds of culture materials were compared.The results showed that there were significant differences in the nutrient content of A.cornea(Yumuer)cultivated with three kinds of culture materials.In addition to the content of total sugar slightly lower than that of oak sawdust,the content of crude fat,crude protein,crude fiber and amino acid were significantly higher than those of other formulas,and the effect of eucalyptus sawdust on the nutrient content of A.cornea(Yumuer)was the worst.The content of Pb and Cd in the three kinds of culture materials did not exceed the national food safety standard,and met the requirements of green food(edible fungi).In order to provide reference for the evaluation of the nutritional value and quality safety of edible fungi cultivated with three kinds of sawdust,the differences of nutrient composition and heavy metal content of three kinds of sawdust were compared and analyzed.
