摘    要:辣椒果实中含有多种维持人体正常生理机能和保健功能的活性物质,本文重点介绍了辣椒碱、辣椒红色素、辣椒籽油等的应用,为企业对辣椒深加工、延长辣椒产业链、提高辣椒生产附加值提供参考。

Abstract:In the fruit of chilli,there are many kinds of functional and active material which can keep human body normal and healthy,such as capsaicin, capsanthin and the oil from chilli seed,and this related study can give the valuable reference to the capsicum industry development.
