野玫瑰色素性质的研究

摘    要:以干制的野玫瑰花为原料,5%的柠檬酸溶液为溶剂浸提得玫瑰色素,研究了该色素的溶解性、光谱特性、颜色反应、色价及不同pH条件的色调等。结果表明:野玫瑰所含色素属花青苷类色素。玫瑰色素(pH 1~3)易溶于酸性含水的极性溶剂中,不溶于非极性有机溶剂中;玫瑰色素水溶液紫红透明,其对热稳定性较高;食品添加剂和大多数金属离子对色素稳定性无不良影响;Fe2+、Fe3+可引起玫瑰色素溶液变色。

Abstract:The dry rose were extracted by 5 % citric acid.The result indicated that: The rose pigment is the ahthocyanins.Which is soluble in actic(pH=1~3)and water polar solvents easily,but not in non-polar organic solvens.It appears purplish red and transparent in the solution,and is stable to heat and sunlight.Most food additives and most metal ions had no effects on the pigment except that Fe2+ 、 Fe3+ had severe undesirab leeffect.
