摘    要:黑龙江是中国重要的强筋春小麦产区,虽然培育出了多个优质强筋麦品种,但是如何通过合理的施肥技术等保证小麦品质已成为黑龙江小麦生产的重要问题。作为品质鉴定指标,麦谷蛋白大聚合体的含量比蛋白质和湿面筋含量更具代表性。为此,在相同HMW-GS背景下研究了氮肥与硫肥施用对小麦谷蛋白大聚合体的含量的影响。试验分设4个施肥处理(未施肥、单施纯硫50 kg.hm-2、单施纯氮150 kg.hm-2、纯硫50 kg.hm-2+纯氮150 kg.hm-2)。结果表明:氮肥与硫肥的不同处理对小麦籽粒的蛋白质和麦谷蛋白大聚合体有明显影响。施硫肥、氮肥以及2种肥料混施提高了上述2个品质指标及其比值。综合研究表明,在3种处理方式上,氮肥与硫肥混合施用对蛋白质、麦谷蛋白大聚合体影响最大。因此,生产上在提高氮肥用量的同时,可通过增施硫肥,达到小麦高产优质的目的。

Abstract:Application of N and S fertilizer are the important measures that increase grain yield and improve quality of wheat. The field experiment was carried out to study the effect of nitrogen and sulfur application on glutenin macropolymer of spring wheat varieties with the same HMW-GS background. There were {our fertilizer rates:0, S(50 kg·hm^-2), N(150 kg·hm^-2) ,S(50 kg·hm ^-2)q-N(150 kg·hm^-2 ). The results showed that the treatment of nitrogen and sulfur fertilizer obviously affect wheat protein and glutenin macropolyrner. Application of nitrogen,sulfur or both could raise the quality parameters mentioned above. Among the three treatments,nitrogen and sulfur fertilizer together had the greatest effect on protein and glutenin macropolymer, that is to say, more sulfur or nitrogen fertilizer was beneficial to increasing protein,glutenin macropolymer.
